Foodie Friday…Spicy Shrimp with Coconut Milk

I had some leftover coconut milk and fresh ginger from a recipe I had made and felt like having spicy shrimp. A quick internet search yielded this recipe from Food.com. I only wanted enough for me and only had enough coconut milk for 1/2 this recipe, but I had all the ingredients for the spice mix…and there are quite a few. So, I mixed all the spices (bold/italics below) in a bowl and then only used 1/2 of it. Now I have leftover spices for the next time!

Spicy Shrimp in Coconut Milk
oil
1 c. chopped onion
1 TBS minced garlic
2 tsp minced fresh ginger
2 TBS coriander
1/4 tsp cumin
1/4 tsp cinnamon
1/8 tsp cayenne
1/8 tsp turmeric
1 cup drained canned tomato (I used petite diced)
2 1/2 cups unsweetened coconut milk (again, I used what I had, about a cup)
1/2 cup water
1 tsp salt
1 1/2 lbs large shrimp, peeled & cleaned (I buy the frozen ones and just have to take off the tail)
3/4 cup fresh cilantro
lime wedge (optional for serving)

Heat oil on med-high, add onion and cook til softened, around 3 minutes. Add garlic & ginger and cook another 2 minutes. Add 5 spices and cook 1 minute. Add tomatoes and cook 1 minute. Add coconut water, milk and salt…and bring to simmer. Simmer until thick..about 5-10 minutes. Add shrimp, simmer 5 minutes. Stir in cilantro. Serve with lime wedges (optional)

I had mine over brown rice….yummy!

Dinner and a Show…among other things

Actually it should read “lots of dinners and a show” but that didn’t sound right. I was in NYC again a couple of weekends ago to visit Austin & Kate…joined by Taylor, my sister, Mariellen and her daughter, Clare. Mariellen suggested seeing the Broadway show “Dear Evan Hansen” and I thought it was a great idea. I’d heard it was amazing and a couple of weekends before we went it won the Tony for best musical and Ben Platt, as Evan, won for best actor. Both were well deserved!!

I only kind of knew what the play was about, a socially awkward teen thrown into an uncomfortable scenario where he ultimately feels like he fits in. Honestly I wasn’t really sure about the subject matter and how it could be so good?? All I can say is Oh.My.God!! I haven’t seen Hamilton yet (I hope to on my next trip), but this is one of the most powerful plays and performances I’ve ever seen. After the first song, while the audience was applauding loudly, I said, along with the clapping “Holy Shit!” It was that powerful! When we all met up at intermission we were in awe and somewhat speechless. What could possibly happen in the 2nd half? Needless to say, you just need to go see it if you’re in New York…..and bring tissues. Yes, the ticket prices are ridiculous, just like Hamilton, but this is a show and performance that we continued to talk about throughout the weekend. WOW!!

We stopped after the show for a drink and then made our way down to our restaurant reservations at Beauty and Essex. The food at this restaurant was amazing. It’s meant to be shared, which is my favorite style of eating. Lots of different flavors, spices, textures, presentations. Yummy and aesthetically pleasing at the same time.

I’d highly recommend dining here. I, purposefully, didn’t take any “food” pictures during the weekend (these are gleaned from the internet) because I decided I just wanted to enjoy the experience with family. We did, though, take plenty of group pics throughout the weekend….mostly at restaurants.

Summer Foodie Friday…Tuna Poke Bowl….Roasted Beet Salad

I happened to be near an Asian food market the other day and it was about lunch time. Tuna poke bowl sounded yummy and I hadn’t made it in awhile. Sooo good!

Here’s what you’ll need…

  • a small piece of sushi/sashimi grade tuna
  • 1/2 cucumber, peeled
  • 1/2 avocado
  • 1 TBS soy sauce
  • 1 TBS lemon or lime juice
  • 1 TBS sesame oil
  • toasted sesame seeds (optional)

Combine the soy sauce, juice and sesame oil in a bowl. Chop the tuna, avocado, & cucumber into small bites and add to the bowl, mix well. (you can sprinkle with toasted sesame seeds for a nice added texture and taste…but I didn’t have any this time) Enjoy!!

On to the next thing….

I was in the mood to keep cooking after lunch….aaahhhh, summer, carefree, leisure time….. and my friend/neighbor, Carre, had brought over some fresh beets from her garden and I decided to roast them on the BBQ (because it was so f-ing hot here!) and make a beet & tomato salad with goat cheese to add to my dinner that evening. So easy, no cleanup, so delish!

Set your grill to medium-hi. Cut the greens off the beets and the little bottom root, so it can stand up (reserve the greens for another meal). Spray some Pam on tin foil. Rub the beets all over with oil…I happened to have garlic oil. Cover tightly and put on grill for about 45 minutes to an hour. Let them cool just a bit and then uncover. It’s then super easy to just rub the skin off the beets. Voila, you’ve made your own roasted beets. I combined them with some mini heirloom tomatoes, cucumbers and goat cheese and drizzled them with a roasted garlic oil and balsamic mix…and always some salt & pepper.

Change by seeing a future you? getting unstuck

Okay, so you know I’ve moved 4 times in 4 years and all were a new learning experience. The last place I lived was a tiny studio and my bed, was my couch, was my chair. I got into the habit of grabbing my phone off the window ledge in the morning and checking emails, instagram, texts…whatever….and by the time I was done almost 1/2 hour had passed. This is NOT good when you’re up at 5 to get to practice at 6…I felt like I was always rushing, and I was literally 10 minutes away.

Now that I’ve moved back into my former home, which is 20 minutes away from the boathouse, I was still in the same bad habit & sometimes late for practice. I needed to change it and just get my mornings back! ….but it took some commitment.

I didn’t do anything for more than a year and somehow made it work, not successfully! My mornings seemed so much more frantic and hectic than those in the past. Then I read a few articles about changing your habits by seeing your future self…and I thought I’d give it a try. They say it takes 21 days to change a habit and I figured I could at least give it a go. Here’s what I did…

On rowing practice days I don’t even look at my phone when I get up. I turn off the alarm, get dressed, have a quick bite and get in the car. I check if I have any “rowing related” texts while in the car and then just enjoy my ride to the beach with music or a podcast (I recently finished S-town, which was great!)

On the days that I don’t have rowing practice….instead of grabbing my phone & spending 1/2 hour in bed, I grab my earplugs and meditate for at least 10 minutes…or I just get out of bed without looking at my phone. I recently bought a jumprope and 6 lb weight ball and have tried to work out at least a little bit….or I love my 3 mile walk in the ‘hood on my off-rowing mornings. Again, I do this before looking at texts/email/instagram.

Basically I’ve tried to disconnect a little bit in the mornings and it’s been heavenly!

Here are a few helpful things I gleaned from articles….

  • Choose what it is you want to change and write it down. It can be something really simple that can change your life even in the slightest way….or it can be something bigger, but you need to take small steps to accomplish that goal.
  • Have faith in yourself and your ability to choose that goal…so important! If you believe you can do something, there’s a greater chance that you can…self fulfilling prophecy!
  • Visual…truly visualize…yourself in the future after you’ve accomplished it. For me it was visualizing not rushing and just being more relaxed in the morning.
  • Come up with ways you can accomplish this by making small changes. Mine was..”don’t look at the phone before I get out of bed” which at first was remarkably difficult…yours might be “I’m going to make my bed every day” …which, by the way, is a great way to have a sense of accomplishment every day according to this article!
  • For something big, like losing weight, it helps to string together small accomplishments, like “I’m going to walk for 15 minutes every day” and once you’ve accomplished that, add another 15 minutes.

These small steps, strung together, can become bigger things. AA & Weight Watchers use this strategy of small, clear steps or rules to achieve success…and keep checking in to make sure you’re staying on track. Here are a few daily affirmations (you know how I love them) to help keep you on track…or get you back on track.

  • One I’ve learned in WW… ”If you always do what you’ve always done, you’ll always get what you always got.” Apparently it’s been credited to Henry Ford and Tony Robbins too.
  • What will matter is that you acted, that you made a contribution, and that you decided to do something. Or that you didn’t.
  • A lack of planning is basically just stalling.

Hope this helps. I sure have some bigger goals that I’d like to achieve, but I did get quite a sense of accomplishment by making this small change to my mornings!

Foodie Adventure Friday…Cooking in Capistrano

When I took the train recently down to San Juan Capistrano with some friends we came across a cute place that offered cooking classes. It’s called Tspoons. In the weeks that followed I occasionally looked at their lineup of classes and then one day just decided to book one. I’ve always loved risotto and wanted to learn how to make it…and the Gnocchi, Ravioli and Risotto class seemed like a great line-up of foods to explore.

And so it was last Saturday that my friend, Carre, and I hopped on the train and got off in San Juan Capistrano for an evening of cooking. We went a little early so we could explore the Los Rios District shops, which were closed on the last train trip down.

We both really enjoyed the cooking class! It was a little bit different than other cooking classes either of us have taken. We made all the sauces, raviolis and gnocchis, but all the ingredients had been measured out beforehand (mis-en-place) and placed on cookie sheets below the prep surfaces. One other different feature we enjoyed….we started cooking all the recipes (Wild Mushroom Ravioli with Marsala Cream Sauce, Fresh Pea and Asparagus Risotto topped with garlic butterflied shrimp, Creamy chicken and summer greens gnocchi stew and, lastly, Fried Nutella Ravioli) but just when you think it’s feeling like a long class and you’re still not done yet, the chefs invite you to sit down while they finish the recipes and serve you. It was the perfect blend of cooking, relaxing and socializing. I think it would be really fun to go with a big group.

I’ll definitely be going again and I’d recommend this place…along with a day in SJC. They’ve really turned Capistrano into a day-trip destination. There’s the aforementioned Los Rios District, which has some adorable shops, a few restaurants that I’d still like to try and a petting zoo; this cooking class; Swallows Inn, a famous, loud, dive bar; The Old Barn Antique Mall; and of course the famous Mission San Juan Capistrano…..not to mention the fun train ride down there!

Now you have that Rolling Stones song in your head, huh?! This post really has nothing to do with the song…. it’s about the color of doors and the history behind them. Join me on this journey!

I LOVE my fire engine red dutch door…and the vintage life preserver enhances the red and conveys my love of the water! When I decided on the color over 15 years ago I just thought it seemed warm and inviting and just fun! Red is my favorite color. I was talking with my friend Mary Kay the other night and we got on the subject of front stoops and doors (there’s a whole history of stoops and the amount of steps on it…another post). I decided to just look up some info and found out some fun facts.

St. Marks in Yorkville/Manhattan, NYC…its interesting that the Deutsche Ev Kirche had its origins as German Protestant with a single doctrine compatible with National Socialism….to me, it looks like a Star of David above that door….just sayin’?

Biblically red doors are part of the Passover story, when God commanded the Israelites to cover their doors in the blood of the lamb. But on a more upbeat note…red doors, historically, have meant “welcome!” Back in the horse and buggy days it was a sign of a safe place to rest & stay. During the Underground Railroad era, doors were painted red to guide slaves to a place of refuge and safety. In Scotland it is said that you painted your door red when your mortgage was paid off (that is not the case for me!). The Chinese consider it a lucky color and it is a color used during the Chinese New Year….and lastly, Feng Shui practitioners say that a red door invites positive energy. So….what do some other front door colors mean?
