The Beauty of the Crock Pot….and a recipe

Thanks to Taylor and Dan, I’ve discovered the beauty and ease of the Crock Pot…or slow cooker. I think my mom used it sometimes when I was growing up, but mostly I remember her use of the pressure cooker, which was just scary, and loud, and seemed like it was going to explode any minute. I never wanted to go into the kitchen when that thing was on! The pressure cooker speeds up the cooking process, while the slow cooker, as it sounds, cooks food slower!

So a couple of weeks ago T&D made the most amazing chili in their Crock Pot and all they did was throw some things into it in the morning and turn it on. Easy peasy!! I had to get in on the fun! My friend Kelly had made a roast a few months ago and she told me it was super easy, so I thought I’d give it a try. It was amazing! Here’s the recipe….

1 chuck roast
1 packet ranch dressing powder
1 onion chopped
1 few sweet potatoes (or regular) cut in chunks

Put the potatoes and chopped onions on the bottom…

cover with the chuck roast…and sprinkle the packet of ranch dressing over the top.

Put the cover on, turn it to low and let it go for 6 hours….no liquid needed. When it’s done it looks like this…

Take meat out and shred it using two forks…

Put it back in the crock pot, turning to “warm” setting, to soak up the juices. That’s it! You can serve it with a salad, roasted vegies, or whatever, but we just put it in a bowl and dug in…

The following evening I served it over brown rice…and there were plenty of leftovers to take to work for lunch.

It’s finally starting to get cold here in SoCal so it’s the perfect winter meal. This past Tuesday T&D made shredded chicken tacos for Taco Tuesday and they were soooo good! The possibilities seem endless and I’m looking forward to experimenting with some recipes in this newly found…for me that is…kitchen gadget.

My team had a race this past Sunday in San Diego and a few of us decided to go down on Saturday, with a leisurely drive down the coast…and the promise of a few extra hours of sleep Sunday morning (otherwise it was a 3am wake up call to get down in time for the races…ugh!) My friend, Renee, has a serious love of seals and, thanks to our teammate Amy, knew of the perfect spot called La Jolla Cove to view these adorable sea creatures. I’ve been to the really large elephant seal preserve, Piedras Blancas Elephant Seal Rookery, up near Hearst Castle, so I knew they’d be cute and worth the stop…but, been there, done that..or so I thought!

We exited the 5 Freeway at La Jolla Village Drive and wound our way down to a little street along the water and it was like entering a Mediterranean seaside town. The cliffs were teeming with people…and from the sound of the accents, from all over the world. The seals were, as promised, adorable, but the beauty of the cove and cliffs were breathtaking. There were numerous swimmers and people snorkeling, as well as tons of kayakers just North towards La Jolla Shores beach. An enchanting water playground!

The scenery was gorgeous and I took a bunch of pics, but it was time to get going to our next stop, Crown Point Park on Mission Bay, to rig our boats in preparation for the races. As we pulled away from the cliffs Renee asked if we wanted to see the little village on our way. Sure, why not! OMG…I have to go back! There are a MILLION restaurants and little shops

and I don’t even know what else because I was getting whiplash trying to look left and right as we drove through town. Thankfully, Patricia needed some coffee, so we made a quick pit stop at an adorable little place called Brick and Bell (you can tell it’s adorable by the name!) As I said, I have to go back! I know there’s so much more to see and do in this little hamlet by the sea.

We finished off our day with the team, rigging boats and enjoying another great meal at Tru Food Kitchen. Sunday was all about another beautiful sunrise over Mission Bay, a day of racing and finally de-rigging the boats for their drive back up to Newport.

Get Lost in a Movie This Weekend

I realized last week that I haven’t been to the movies in awhile, so this week I remedied that dilemma by taking in two movies. When it comes to doing activities solo I think the movies is a really good one. I know some people feel awkward going into a restaurant and eating dinner by themselves, but going to a darkened theater to get lost in a movie is the perfect activity to do alone. You can’t talk during the movie…or at least you shouldn’t…and if it’s not a really deep movie that begs for discussion afterwards, then it’s a great get-away!

The two movies were Burnt with Bradley Cooper and Sienna Miller and the second was The Intern with Robert De Niro and Anne Hathaway. I’ll start by saying I loved both.

Burnt is the story of a highly acclaimed chef who basically peaked too early as a young chef and destroyed his career with drugs, etc… and who then decides he wants to redeem himself by opening a new restaurant in London and earn three Michelin stars. Okay, it’s not going to win any awards, but I loved the story, it involves beautiful food presentation and how can you not love Bradley Cooper?? He’s just adorable and I loved watching him for a couple of hours. So, go spend an afternoon getting lost in his culinary world.

I really loved The Intern and it’s probably because of the numerous messages that are hit upon throughout the movie. First of all it’s a Nancy Meyer movie and frankly they’re all just great, lovely stories. She’s been the writer and/or producer of Father of the Bride, The Holiday, Something’s Gotta Give, and It’s Complicated….to name a few! Her attention to detail with the sets and the settings are unparalleled. They’re usually cozy, charming and perfectly decorated. You know how a Danielle Steele novel is predictable, in a good way…that’s kind of like a Nancy Meyer movie…only better! You know it’s going to be a good, easy movie to watch with some nice messages throughout. I’m never sorry I spent the time in the movie theater to see one of her movies and they’re usually ones that I can watch more than once. How many times have you seen The Holiday?? I’ve seen most of her movies numerous times. Okay, enough about Nancy. The Intern is about a new program at a start-up company using senior interns (senior citizens that is) as interns. Anne Hathaway plays the founder of the start-up that is becoming really big, really fast and struggles with how to handle the growth. She’s not crazy about the whole senior intern idea, but ends up loving him and he helps her..yada, yada, yada. The messages I came away with were…#1 the millennials need embrace the art of the conversation and one on one contact..it’s getting lost to texting and emailing (that’ll be an upcoming post of mine.) #2 the rise of women/moms in the workplace and the cultural dance that society plays, including embracing the stay-at-home dad. #3 we should start carrying handkerchiefs. & #4 when you retire or when you are left alone in the autumn of your life you keep busy and fill your time because you don’t want to just sit around and let life pass you by. I really love Robert De Niro in this film…endearing and lovely. Anne Hathaway can be a bit annoying to me as an actor, but she’s pretty good in this and plays the role well. …and lastly, it’s set in NYC…what’s not to like!

On Being a Woman, Inequality…and an all girl’s Catholic high school

My friend, Darla, posted this video to FB that has the following caption..”Dustin Hoffman breaks down crying explaining something that every woman sadly already experienced.” I love Dustin Hoffman and most of his movies so I clicked. (I’ll wait while you click & watch it….)

So, after watching it, I started thinking about myriad issues relating to the differences between men and women. I’ve always liked being a woman…and that’s good, because I don’t have much choice! (well, nowadays I guess I do have a choice but that’s a whole different post) I went to an all girls Catholic high school and I believe it empowered me to stand up for myself and not feel inferior to boys. It’s just not something you think about when you’re surrounded by strong, confident women….even if it is only high school. I don’t think I ever really considered that boys would make more money and hold more leadership positions. I still consider myself a feminist of sorts….not like some staunch feminist who come across sometimes as man-haters…but I enjoy getting my nails done, putting on makeup and fun clothes…and I confess I feel a bit superior to men in that I can carry a baby for nine months and they can’t. In the end, though, I just feel like men and women are equals….but, at the age of almost 55, I guess I’ve been naive…and to be honest, I like living in my glass-half-full world, even if it is naive.

There’s been a lot of talk lately in the media and with the presidential candidates about the inexplicable inequality between men and women’s wages. How can it be that a male CEO makes much more than a woman CEO? In the intro to Sheryl Sandberg’s book Lean In, her website says “The book challenges us to change the conversation from what women can’t do to what we can do,…” How sad that we need a book to tell us how to act in society in order to get ahead in the male dominated business world, but it did get me thinking whether there was any time, or times, that I felt I was being treated differently because I was a woman. A few came to mind…

The only time I truly know I was treated differently because I’m a woman was the time the was-band and I bought our first new car. It was going to be a mom-mobile, aka minivan, to shuttle the kids and their friends around to various activities, as well as for long road trips. So, we go this dealership to get a car, for me, and the salesman literally asks the was-band all the questions….what color would you like? what model looks good to you? did we want to finance it? Every. Single. Question. was directed at him and the guy barely looked at me. When I tried to answer a question he’d give his rebuttal to the was-band. Wow, was I pissed off!! Needless to say we left there, me fuming, and bought the car from another dealership.

The only other time I felt I was treated differently because I was a woman was at a job I had back in my early 20’s. I had busted my butt to do everything I could to get a new division at said job up and running, along with the other two principals in the new department. When it came time for our annual bonuses I didn’t get one from the head of the department. I was fuming! I immediately went to the president/founder of the company and this is what he said (I’ll paraphrase)…”Well, think of it this way Jeanine, if you and I went on a date and we woke up the next morning, but I didn’t really have a good time I probably wouldn’t send you flowers.” WTF!!! (today that would be sexual harassment) My first thought was…who says I’d invite you to spend the night…and secondly WTF!! This is your analogy of why I’m not getting a much-deserved bonus? I left that division to move to another department and received the bonuses I deserved…maybe because the head of that department was a woman and not a hot-headed Italian man (he probably had a small penis…did I just say that!)

I probably should apologize to all the business women out there who get treated unfairly by virtue of their gender because it never occurred to me to stand up for them. I was lucky enough to be a stay-at-home mom and am very proud of the two people I raised. It was a job that I loved, and not an easy one at times, but I never wanted to do anything else. It never occurred to me that if I did want to do something else I might be denied the privilege due to my gender. Naivete, probably, but maybe it’s just ’cause I’ve always been told, by my mother and by those nuns in high school, that I could do anything I put my mind to. Maybe I should put that to the test and try to break some glass ceilings somewhere…at the age of almost 55!!? Oh yeah, there might be age discrimination now too?!

Chicken (or salmon) Goat Cheese Ravioli with a Butter/Vermouth Sauce

IMAG5423I just made this a few weeks ago and remembered how much I love it! The sauce is to die for! I’m sure most of my friends have had it at my house at a dinner party at some point over the years. Full disclosure, I got this at a neighborhood party many, many years ago and I’m not sure who made it….I think it’s either Carre or Kate who got it at a cooking class? Anyway, it’s fabulous and I almost always make it now with leftover salmon. You know how you buy that big piece at Costco and there’s always leftovers…well make this! Yes, it’s a bit time consuming, but just make a bunch of them and freeze for a later date. You can pre-make the ravioli, freeze it on cookie sheets, then transfer to ziploc bags so they’re easy to just take out a few. Just take out a couple of hours before you’re ready to poach & serve it.

Sauce:
2 T minced shallots
โ”ฌโ• c. dry vermouth
2-T. tamari or soy sauce
โ”ฌโ• c whipping cream
โ”ฌยฅ c unsalted butter (I don’t use this much…usually somewhere between 1/4 & 1/2 cup)

In a saucepan over medium heat, combine shallots, vermouth, and tamari (or soy). Cook until reduced to about 2 T. (I never do this…I usually wait till it’s reduced a bit and then proceed) Add cream and cook until reduced to about 2 T (again, I don’t usually wait for this, but just let it reduce a little…have I mentioned I’m impatient!). Over heat add butter a T. at a time until melted. (I just added the whole stick at once) Set aside.

Filling:
โ”ฌยข c cooked ground chicken (comes in a can like tuna)…leftover salmon is great too
1/3 c goat cheese crumbled
1 tsp. Fresh gingerroot minced
2 T minced green onion
White pepper
Pinch of salt

In a bowl mix the filling ingredients and set aside.

Ravioli:
1 egg, beaten
1 tsp. water
24 wonton wrappers (found in the refrigerated section)

To make ravioli, beat the egg with the water and a pinch of salt. Set aside. Place a round teaspoon o filling in each wonton wrapper. Moisten the edges with the egg wash. Cover with another wrapper and press around the edges to remove air and seal well. (You can crimp the excess with a crimping wheel, bit I just use a fork).

Poaching:
2 โ”ฌยข c chicken stock

In a large frying pan heat the chicken stock to a simmer. Poach the wonton ravioli in the simmering stock for @ 4 minutes or until centers are translucent. Put on a large serving plate & ladle sauce over generously (or put on individual plates). Serves 4 (yes, the sauce and ravioli are very rich, so 3 is usually enough. You’ll need a side of veggies and probably some bread to soak up that amazing sauce!)
